The Nocellara del Belice is a particularly valuable olive variety, considered one of the most esteemed and appreciated Sicilian varieties ever, to the point of obtaining a DOP certification in 1998. This particular variety gives us an extra virgin olive oil from yellow to deep green with very low acidity, a bitter taste, slightly spicy but with a hint of sweet. This oil is perfect for typical Mediterranean cuisine; however, its best expression is provided when tasted raw.

THE NOCELLARA TREE

The tree of such a variety has medium vigor, an expanded habit that produces very large olives, also dotted with large lenticels and with a very firm pulp.

CLIMATE

The climate of the area is typically Mediterranean with rainfall concentrated in the autumn-winter period and drought for the remaining months of the year.

MATURATION

Although the ripening period is somewhat late, this olive reaches maturity relatively early and has a very good level of productivity, with a medium-high oil yield that is often above 20%.
